If there’s one person I admire when I think about my weight loss journey, it’s Andie Mitchell. Andie runs the blog Can You Stay for Dinner? She lost 135lbs, and has maintained her weight ever since, not to mention she lost the bulk of it while studying abroad in Rome. Her mentality on food and weight loss is so refreshing, and she’s quite funny. She has a plethora of great stories and recipes she posts regularly, and they never cease to amuse and inspire me. Here are some of my favorite recipes of hers:
Petite Lasagnas - These are AWESOME, and so incredibly easy to make. Not to mention they’re the perfect size and warm up great.
Buffalo Chicken Rolls - These were a bit tricky for me, but they were worth it. It took me awhile to get the rolling part down without breaking the egg roll wrapper. I also didn’t have a rack to put them on and I’d say that’s crucial. They didn’t really crisp up very well and my guess is that was the problem.
The Very Best Cupcakes – She’s not kidding. I used these recipes to make cupcakes recently for a friends graduation and they were great. I used the yellow cupcake recipe and added sprinkles for a “funfetti” cupcake. I took the white cupcake recipe and added yellow and red food coloring and made a layered cupcake.
